Oh! BTW, I meant to add this to the post and forgot: For the sugar, I use 1/3 red sugar and 2/3 turbinado/'sugar in the raw'. I put a couple drops of orange extract and a drop of yellow coloring on wax paper, smush it all around and use let it dry, then use that to roll the dough in. It add an extra tiny zing of orange, and makes a wonderful orange-y rind.
